Chicken with lemon and Potatoes

Yields4 Servings

Roast Chicken

 1 Large chicken (around 2kg)
 ¾ cup Olive Oil
 2 cups Water
 4 Cloves Garlic
 2 Lemons Juiced
 1 Orange juiced
 3 tbsp Mustard
 10 Potatoes
 2 tbsp Greek Oregano

Preheat oven to 180C


Dry the chicken with an absorbent kitchen paper towel and place in baking tray


Cut the potatoes into wedges and place all around the chicken


Roughly chop the garlic into small pieces and add to baking tray.


Sprinkle oregano salt and pepper over chicken. Then pour over lemon and orange juice.


In a bowl mix mustard and olive oil. When combined pour over the whole dish.


Cover pan with a lid and place chicken in pre-heated oven and cook for 1hour. Remove and stir and replace back in the oven for another 40 min or until the potatoes are well softened but crunchy.


Allow chicken to rest for about 15min to recover its juices.
