For the lentils soup, first rinse the lentils and boil them with plenty of water
for 5 minutes and drain.
Heat 3-4 tablespoons of the total olive oil and sauté the onion for 3
minutes.
Add the garlic, carrot and tomato paste and stir to mix.
Add the lentils, bay leaf and hot water to cover everything.
Cook for about 25 minutes on low heat to simmer the ingredients. Season
with salt and pepper at the end and add the remaining olive oil. Last add 3
tablespoons of vinegar and serve.
