In a bowl put Olive Oil, lemon juice, a grated Onion, Oregano and the vinegar and mix well. Season the meat with salt and pepper. Put your meat into the bowl and use your clean hands to mix everything together really well. Cover with clingfilm, then pop into the fridge for 30 minutes, or longer if you want the flavours to get a bit more intense.
Preheat the oven on 180C. Place the marinated meat in an oven tray and cover with water. Bake for 40 minutes or until your meat is cooked. Cut the meat in slices. Warm your Pita breads in the oven for 5 minutes after you have brushed them with a bit of Olive Oil.
Take a pita and put a tablespoon of Tzatziki sauce in the middle. Add a slice of meat and slices of onions and tomatoes. Sprinkle some salt and pepper and smoked paprika and wrap it in baking paper.
Tip: You can serve your souvlaki with potato chips. Alternatively for your marinade you can use the Greek Gyro Mix.
