Spanakorizo (Spinach and Rice)

Easy dinner side to add to any dish.

 500 g Fresh or frozen spinach
 2 Spring onions, finely chopped
 1 Onion, finely chopped
 ½ cup Medium grain rice
 3 tbsp Dill, finely chopped
 2 Carrots- cut into thick slices
 1 Lemon, juiced
 Salt and Peper to tast

Wash the spinach then roughly chop into thick pieces. Blanch the spinach in boiling water and strain it.

If you are using frozen spinach, you can use this straight from the freezer.

Heat half the oil in a pot and saute the onions and the carrots. Add the rice and stir for 3-4 mins

Add the spinach, dill and salt and pepper, to taste, to the pot and continue to saute for 1-2 min.

Pour in the lemon juice and remaining oil into the pot.

Cover with water and cook on a low heat for 30 to 35 min.
